Oak chips
Small pieces of oak wood used in fermenting or ageing wine instead of oak barrels. Oak chips are mainly used for ageing wine more quickly and also for adding vanilly, buttery or woody aromas to the wine.
Oak
Wine barrels are made out of oak.
Oaky
Tasting term describing the taste or aroma of oak wood. Oak flavour is introduced from the contact with barrels made from oak.
Oenology
Oenology is the science of winemaking from the grape harvest to bottling. An expert in oenology is an oenologist or winemaker.
Oenophile
Oenophiles are people who appreciate or collect wine. They are also known as a wine aficionados or connoisseurs.

Oidium
Oidium is a fungal disease, also called powdery mildew. Oidium thrives in specially humid and hot weather conditions.
Oily
Tasting term describing the fat sensation of a wine with high glycerin and low acid content on the palate.
Old vine
'Old vine' refers to wines produced from grape vines that are notably old. Grape vines can grow for over 100 years. After about 15 years, vines produce smaller crops, leading to more concentrated and intense wines.
Old World wine
The Old World wines refers historically to the traditional European wine growing areas with a long tradition of viticulture such as France, Italy, Spain, Portugal, Hungary, Germany, Austria, Switzerland and so forth.
Open up, opening up
Tasting term referring to cellar-aged mature red wines that dont immediately show much flavours but develop a beautiful bouquet after airing.
Organic Viticulture
Organic viticulture is applied to winemakers who wish to rely less on pesticides, fertilisers and chemicals generally speaking. Organic viticulture is sometimes compared to biodynamic viticulture, although this is more extreme.
Overipe
Grapes are left on the vine to dry in the sun, concentrating sugar and developing a raisiny character.
Oxidation
Tasting term describing the degrading action of oxygen on a wine.
Oxidized

Close term to nutty.
